Low Carb Keto Italian Eggs

When I was growing up, we called these “Eggs in Purgatory”. You can make these for whatever portion you would like. They could all be done in a skillet, casserole, or you could do individual ramekins like I did. The recipe below is for one egg, but you can easy multiply it by however many eggs you’d like to prepare.

The Trader Joe’s Marinara in the refrigerator section is PERFECT for this, and it is quite low in carbs. For the cheese, you could go with parmesan, mozzarella, or other cheese of your choice.

For 1 Serving:

Ingredients:

1 tsp butter

1 egg

2 Tbsp low carb marinara sauce

1 tsp cheese (Parmesan, mozzarella…

pinch of black pepper

Method:

Preheat the oven to 400 degrees.

Grease the ramekin with butter. Put 1 Tbsp of sauce in the bottom of the ramekin. Crack the egg into the ramekin and top with remaining marinara. Place the ramekin(s) on a cookie sheet.

Bake for 10 minutes or until the egg has the desired amount of “jiggle”.

Top with black pepper and cheese of your choice. Allow to sit for 5 minutes to cool and melt. Pop your yolk immediately if you want it to stay liquid.
