Amazing Caprese

My mother in law offered me her awesome tomatoes and basil from her garden. I was able to throw this together to eat as a side dish instead of the fries that everyone else was eating. Soooo tasty.

Ingredients for a single serving:
–10 mozzarella balls
–7 grape or other small tomatoes, halved
–1.5 tsp extra virgin olive oil (or even a flavored oil such as herb or basil)
–1 large basil leaf, cut into ribbons
–1 Tbsp balsamic vinegar
–salt and pepper to taste

Lay the mozzarella and tomatoes in the bowl, sprinkle the oil and vinegar over the top, add basil, and season to taste. Voila!

Chaffles and Sausage Gravy

Well, this was some seriously dirty keto. The sausage gravy has 2 net carbs per 1/4 cup, and I posted a photo below of the brand. I used the regular “Chafflerecipe to create the base, and then I poached two eggs to smother with the gravy.

Mediterranean Cucumber Salad

It doesn’t get much easier or refreshing than this. I was able to throw this together in a matter of minutes, and my only problem was not making enough for leftovers. SO good! There are plenty of variations, and I after taking the picture, I remembered that I had some avocado to throw in. It was then the perfect dish.

Ingredients:

  • 1 small cucumber or half of a large cucumber, chopped
  • 1/2 cup chopped tomatoes (I used cherry tomatoes from my garden)
  • 1/2 cup Trader Joe’s Mediterranean Feta Cheese Crumbles (you can use plain if you’d prefer)
  • 1 tsp olive oil
  • 1 tsp lemon juice (more if you’d like)
  • 1/4 tsp sea salt
  • sprinkle of black pepper
  • 1/2 chopped avocado (optional)

Combine all ingredients in a bowl and enjoy!

The Chaffle

Here, I made a sandwich with spinach dip, bacon, tomato, and avocado. It was AMAZING! It definitely felt like I was eating a real sandwich.

This is a MUST HAVE in the Chaffle world. It is only $10 from Amazon, comes in a variety of colors, and is just perfect for the individual sandwich “breads”.

Ok, so the first thing you need to do is grab that mini waffle iron from Amazon. It is cheap and awesome! After that, the possibilities are endless!

These come out nice and savory, and they are not soft and eggy!

To make two sandwich thins:

Ingredients:

1 egg, beaten

1/2 cup mozzarella cheese (can use other kinds of cheese as well, but this is mildest)

Salt and pepper to taste.

Onion powder and garlic powder (optional)

Method:

Preheat your individual waffle iron. Beat the egg and cheese mixture together and add seasoning (whatever you desire). Put in HALF of the mixture into the waffle iron, and cook for 4.5-5 minutes. Remove carefully with a fork, and allow to cool for a couple of minutes before using them.

And that’s it. Seriously. The sky’s the limit. AND….GO!
